I have a big family. Big. BIG.

My dad is one of nine kids.

Which means I have a lot of cousins. Like 72.

Every Christmas night, everyone who can comes to my  parents house to see each other all in one place.

It's hard to get 100 people in the same room.

This is my sweet cousin, Scott. He loves me, he just forgets.

Susan, Myself, Sarah and Shannon. 
(They are all sisters. I'm the adopted one.)

Eli Young Band

Southern girls are a different breed of girls.

Lots of Southern girls are country. Some aren't. Some are. 
Which means, that most likely, they are going to like country music. (Again, not all...)

But the girls I hang with do... so when country bands come to our town, we are there. 
The Eli Young Band came this past weekend so we gathered a crew and went.

Chipotle-Glazed Roast Chicken with Sweet Potatoes

The only word that describes this recipe is...YUM.

It's healthy, it's fresh and it's just darn pretty to look at.

Just, yum.

Ingredients:

•4 Sweet potatoes (10 ounces each), peeled and cut into 1-inch pieces
•2 ½ tablespoons olive oil
•4 chipotle chiles in adobe sauce, minced
•2 garlic cloves, minced
•2 tablespoons honey
•2 teaspoons cider vinegar
•1 ¼ teaspoons salt, plus additional to taste
•1 teaspoon cumin
•½ teaspoon cinnamon
•6 boneless, skinless chicken breasts (2 pounds), rinsed and patted dry
•Chopped cilantro, for garnish (optional)

Directions:

1. Preheat the oven to 400 degrees. In a medium bowl, toss the sweet potatoes in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 min.

2. In a small bowl, mix together the chilies, garlic, honey, vinegar, salt, cumin and cinnamon to make a paste. Rub the paste evenly over each breast.

3. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25-30 minutes. Serve garnished with cilantro. If desired.

**My tips – just try it. That’s all I got.

At Last....My Love Has Come Along

I love weddings. You probably wouldn't know it by knowing me, but secretly, I LOVE weddings.

Luckily for me, one of my high school friends got married this weekend.


It was a lot of fun. A LOT.


Here are some pictures from the wedding. Just looking at the pictures makes me smile.
