Italian Sausage Soup

I have been craving some soup lately - something like minestrone, but a little different. I found this recipe online at Cooking Light but changed it up to meet my needs. Like the rebel cook I am... 


Here are you ingredients - I promise this all turns out to be delightful.


The package of sausage I bought was 16 oz - however, I only used half. 

The other half will be used for goodness later...


Next, chop up two carrot sticks and an onion.

I only used about 3/4 of the onion.


Choppity. Chop. Chop. Chop. 



Add two cans of chicken broth, two cans of diced tomatoes with oregano & basil,
and two cups of pasta. 

Add more pasta. Add less. Add whatever you think is right for you. 

More is always right for me. 


Let it start to boil. Put it on simmer.

And...


Cover! 


Now the sausage has browned and let it drain on a paper towel on a plate.


Take the chopped onion and carrots and add it to the pan.


Once it's cooked down, add the cooked sausage back in and add a 1/2 tablespoon of garlic.


Next, add the one mixture to the soup pot. 


Take some spinach on the bottom of a bowl.


Pour the soup over the spinach (you can add all the spinach to the pot, but I'm not a fan of that the next day) and add some parmesan cheese on top!

Italian Sausage Soup Recipe: 
(Adapted from Cooking Light recipe)

Ingredients:

8 ounces of sweet turkey Italian sausage
2 cans (14.5-ounce) fat-free, less-sodium chicken broth
2 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano
2 cup uncooked small shell pasta
4 cups bagged baby spinach leaves
2 tablespoons grated Parmesan cheese

Directions: 

1. Heat a large saucepan over medium heat. 

2. Add sausage to pan, and cook about 5 minutes or until browned, stirring to crumble. 

3. Chop a small/medium onion and two carrot stalks 

4. Once the sausage is cooked, remove from heat and let drain, then add the chopped onion and carrot to the pan.

5. In the meantime, add broth, tomatoes, and pasta to pot, and bring to a boil over high heat. 

6. Once the pot is boiling, cover and put on simmer. 

7. After the onion and carrot are cooked down, add the sausage back to the pan and add a 1/2 tablespoon of garlic 

8. Remove the sausage, onion and carrot from the heat and let cool before adding it to the pot

9. Place spinach at the bottom of a bowl, ladle soup over the spinach so it can wilt, then add shredded parmesan cheese to the top of the soup.
